Unfortunately not as simple as picking next one from a guide as your choice of ships is largely determined by your specific needs - I assume you're planning on pve at least initally to get that income coming in. Anyway, I'll give you my thoughts on the matter and try and point out where the races strengths and weaknesses.
Gallente are passable mission runners, their strengths being largely the drone boats and that those ships are quite forgiving when you have relatively few skillpoints. You have the Vexor cruiser, then the Myrmidon followed by the Dominix (somebody above mentioned the dual LAR domi which is a fantastic mission ship - bit lacking on dps but the tank and ease in fitting is great). However the big issue with this race is that hybrids don't perform well in practise meaning a lot of their ships are subpar (long range rails not really having a place in pve and are outperformed by other races guns in general, blasters just being a pain to use in pve and don't really work well in pvp).
You're at a good point now to switch races should you really want to (and given the state of gallente when compared to other the races in general it is something to consider).
Caldari Caldari are considered kings of PVE (damage selection, missile combat has certain advantages over gunnery, easy mode shield tanking being I think the biggest factors - oh and the drake...) but are limited in when it comes to PVP. Great BC (drake )for both pve/pvp, good PVE BS, great E-WAR ships (blackbird, scorpion and the always loved Falcon)
Minmatar Minmatar are FOTM at the moment, they have a place in both PVE and PVP but they are skill intensive - as a race their ships use mixed weapon systems (meaning you may need both missile & gunnery skills to get the most out the ships) and also are split when it comes to tanking (some ships built for armor tanking, others for shield) Arguably best pvp frigate (Rifter), great pvp cruisers (Stabber & Rupture), Hurricance is great pvp BC (and I expect works well enough for pve), great line up of BS for pvp (and can be made to work quite well for pve also). Oh and some great T2 variants of the T1 ships.
Amarr Amarr have limitations in pve due to their damage being EM/Therm, they work very well against certain rat types (Blood/Sansaha/EoM/Mercs) but not so efficient vs others (Guristas/Angels and no doubt others). Certainly have a place in pvp as lazers have a good tradeoff between damage and effective range, in short meaning you hit nicely at distance! Some nice frigs (punisher springs to mind), arbitrator is a nice cruiser (tho it relies on drones for dmg ), Harbinger is nice pvp BC and again a great line up of Battleships for both PVP and PVE (given the dmg type limitations above). Also of note is that Amarr has some of the best solo and gang T2 cruisers around.
Hopefully one day hybrids or Gallente will get some love which may take them back to their heyday (Eos command ship use to be great fun before it was nerfed inline with the others and sensor damps on the recons used to be scary)
